Ingredients:
Butternut squash – 1 piece
Yellow onion – 1 piece
Garlic – 1 head
Cherry tomatoes – 6 pieces
Medium carrot – 1 piece
Spices (paprika, garlic powder, onion powder) – 1 teaspoon each
Olive oil – 1 tablespoon
Shrimp – to taste
Butter – 1 tablespoon
Vegetable broth – 600 ml
Salt and pepper – to taste
Coconut milk – 150 ml
Pumpkin seeds (optional) – to taste
Bread – for serving
Instructions:
Preheat the oven to 200°C (400°F).
Wash all the vegetables. Cut the butternut squash into two to four pieces and remove the seeds. Make some cuts on the squash to help it cook faster. Cut the onion in half, peel the carrot, and slice off the top of the garlic head. Place all the vegetables on a baking tray.
Drizzle the vegetables with olive oil and sprinkle with spices.
Put the tray of vegetables in the oven for 40-50 minutes. Check the squash for doneness with a fork. If the squash is soft, the vegetables are ready to be taken out.
While the vegetables are roasting, you can prepare the shrimp. If they are partially cooked like mine, just sauté them in butter for 4-5 minutes on each side.
Once the vegetables are ready, take them out of the oven and transfer them to a pot. Add the vegetable broth and blend everything until smooth. Then add 140 ml of coconut milk and salt, and stir until combined.
Place the pot on medium heat and bring the soup to a boil. After it starts boiling, let it simmer for 5 minutes, then remove from the heat.
Serve the soup in a bowl, add a swirl of coconut cream, and create a "spider web" pattern using a toothpick or wooden skewer. Top with pumpkin seeds and shrimp.
