Another way to boost your holiday mood? Whip up a simple and delicious recipe like this salad with roasted sweet potato and pomegranate. It’s not just tasty but also festive, with vibrant green arugula and ruby red pomegranate seeds making it a true showstopper

Ingredients (makes 3 medium servings):
Sweet potatoes – 3 pcs
Olive oil – 1 tbsp
Salt and pepper – 1/2 tsp
Red onion – 1/2 pc
Arugula – 50 g
Feta cheese – 50 g
Pomegranate – 1/2 pc
For the dressing:
Olive oil – 60 ml
Dijon mustard – 1 tsp
Honey – 1 tbsp
Salt and pepper – to taste
Instructions:
Wash the sweet potatoes and cut them into medium-sized cubes (around 2x3 cm).
Spread the sweet potato cubes on a baking sheet, drizzle with olive oil, sprinkle with salt and ground black pepper, and roast in the oven at 200°C (390°F) for 10-15 minutes.
Check them visually and taste to ensure they’re perfectly cooked.
Dice the red onion and clean the pomegranate seeds.
Prepare the dressing by mixing olive oil, Dijon mustard, honey, salt, and pepper.
Assemble the salad: start with arugula, then add the red onion, roasted sweet potatoes, feta cheese, and pomegranate seeds. Drizzle with your freshly made dressing.
Your delicious, festive salad is ready to serve!
