Today we’re making a delicious, moist Lemon Loaf Cake - soft, fragrant, and full of fresh lemon flavor.

Ingredients:
Butter (softened) – 140 grams
Sugar – 150 grams
Lemon juice – 40 milliliters
Lemon zest – zest of 1 lemon
Eggs – 3 pieces
All-purpose flour – 160 grams
Baking powder – 4 grams
Cornstarch – 40 grams
Salt – a pinch
Butter (for greasing the pan)
Instructions:
In a large bowl, mix the softened butter and sugar until light and fluffy.
Add the lemon juice and lemon zest, and mix again.
Add the eggs one at a time, mixing well after each addition.
In a separate bowl, combine the flour, baking powder, cornstarch, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Grease a loaf pan with butter and pour the batter into the pan.
Bake at 180°C (350°F) for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
Let it cool slightly before removing from the pan. Enjoy!
